LE DOMAINE
In 2003, I became a winemaker and created the Philemon domain on the family farm. My great-grandfather was named PHILEMON, my middle name is PHILEMON, and the Domain was born.
PHILEMON had developed vine cultivation upon his return from the First World War.
My father, my grandfather, and my great-grandfather (PHILEMON) produced wine at the domain and sold their production in bulk to wine merchants.
I have transformed the vineyard to only retain the historic grape varieties of Gaillac: Braucol, Duras, and Prunelart for red wines, Loin de l'Oeil for white wines, as well as forgotten grape varieties: Jurançon Noir for red wines, Ondenc and Mauzac Rose for white wines.
Since 2004, crops have been grown organically and the vines followed in 2010.
To go further in this dynamic, I have adhered to the more rigorous specifications of “NATURE & PROGRES” (Nature & Progress) since 2015, specifications that are more rigorous than those of organic farming for the vine and winemaking.
On the farm, the vines are located in a preserved environment between woods and fields where we cultivate sunflowers, chickpeas, truffle oaks, and since 2022 Italian Immortelle (Helichrysum).
A small flock of Solognote sheep maintains the hedges, woods, truffle oaks, and the plantation of immortelle.
The vines are pruned in goblet form, a traditional pruning method without iron trellising in order to respect the harmony of the vine and the landscape.
I pay great attention to how I work the soil so that the vine flourishes and produces quality grapes without the use of any chemical fertilizers or herbicides.
The grapes harvested by hand are vinified as single varietals so that each cuvee expresses itself.
In the cellar, no oenological products, chemical or physical treatments are used.
The wines may be lightly filtered (without altering the structure of the wine) and a minimal addition of sulfites is made before bottling to guarantee the stability of the wine.
